Little Dragon Dumplings in Taipei

Well, we know these dumplings by their other familiar name, 'Shanghai dumplings' - little flour sachets filled with meat, usually pork.  In Chinese, these dumplings are literally translated to 'Little Dragon Dumplings'. I've tried these dumplings in many parts of Asia - Shanghai, Hong Kong, Guangzhou, Singapore, even Chinatown and the most famous dim sum restaurants in San Francisco.  The verdict? The best Shanghai dumplings are from 'Din Tai Feng', a restaurant in Taipei, Taiwan or some would be PC and say 'Republic of China'. Through the glass windows, you can see them weigh each little morsel of flour, in order to make sure that each dumpling has enough flour resiliency to hold the pork (and the liquid that oozes out after cooking) but thin enough so that each dumpling, when eaten whole just melts in your mouth.  I was very pleased when I found out that a couple of years ago, they started branching out overseas and now have several branches in Singapore, which I go back to at least once a year.
Slight addition - just got back from Shanghai (Feb 2008) and found out that Din Tai Feng is now also present in mainland China. It has 4 branches in Shanghai alone:-)
