In the mood for legumes

Yes, I'm currently in the legumes phase. Made spilt pea soup, lentil soup, pasta e ceci within a week! Then I went to Whole Foods store and bought a whole bunch of canned ones - red kidney, cannellini, garbanzo. Read about how protein rich they are, how much soluble fiber they contain and better still, how inexpensive they are. Thank goodness for that oversized piece of ham that we made last X'mas. They are so handy now and the diced ham, added to these legume recipes, just made them sweeter and tastier. Absolutely delicious! I must say that the spilt pea soup I made, was the best I ever tried - creamy, savory and just the right amount of ham 'sweetness'.  Absolutely satisfying!
