Jamon Iberico from Jabugo - the black pigs which are fed on acorns only. The best iberico hams come from the town of Jabugo, in the Huelva province, Andalucia, southern part of Spain. I was in Sevilla and when travelling around Ronda and Zahara de la Frontera, was introduced to this amazing ham. I was fascinated by the texture (silky), the taste (very long finish) and the smell (freshly cured). Its closest cousins - the proscuitto, the culatello or even the serrano ham are no where close!
